Ingredients:
• 1 bunch – fresh spinach, torn
• 1 cup – chopped Onion
• 2 cups – Chicken broth
• 1 tsp – Olive or Canola Oil
• 1.5 cups – uncooked long grain Rice
• 2 cups – water
• 1/2 tsp – salt
• 1/8 tsp – pepper
• 1/4 cup – shredded Parmesan cheese
Method:
- In a large saucepan, saute onion in oil until tender.
- Add rice; cook and stir for 2 minutes.
- Add broth and water, bring to a boil.
- Reduce heat, cover and simmer for 15 mins.
- Stir in the spinach, salt and pepper, cook until spinach is wilted.
- Transfer to a 2 qt. baking dish coated with non-stick cooking spray.
- Sprinkle with parmesan cheese.
- Cover and bake at 375 degree F for 20-25 mins or until rice is tender.
