Ingredients:

• 1 kg – arbi
• 2 tbsp Ginger Garlic paste
• 4 Green chillies – finely chopped
• 1 – Lemon
• 1 tsp – ajwain, crushed roughly
• salt to taste
• For the Masala:
• 10 tbsp – thick Curd
• 2 tsp – besan (gram flour)
• 2 tbsp – Fresh coriander chopped
• 2 tbsp – Mint leaves – chopped
• 4 tsp – oil
• 1 tsp – Red Chilli powder
• 1 tsp – Garam Masala & Amchoor

Method:

  1. Peel, slit into four pieces lengthwise.
  2. Marinate the pieces in salt for about 20 minutes or more.
  3. Wash well and strain and wipe with cloth.
  4. Place arbi in a flat dish and add ginger, garlic, chillies, lemon juice, ajwain, salt and mix well.
  5. Now take a pan and add 1 tbsp. of oil and saute the arbi for 4 minutes. Beat curd with a spoon in a small bowl.
  6. Add all the other ingredients and mix.
  7. Sprinkle the dahi mix on the arbi and again mix.
  8. Microwave high covered for 6 minutes. Let it stand for 2 minutes.
  9. Serve after sprinkling it with a little lemon juice.
