Ingredients:
• Shredded Coconut -1/2 Coconut
• chilli powder -2 tsp
• Coriander powder -2 tsp
• Coriander seeds -1 tsp
• Asafoetida -3/4 tsp
• Turmeric powder -1/2 tsp
• Tamarind Paste -1 tbsp
• Toor Dal -1 cup
• Vegetables (small onions, tomato, Drumstick or okra) – 2 cups
• Mustard -1 tsp
• Coriander leaves and Curry leaves for garnishing
Method:
- Wash and cook the dal until soft.
- Heat the pan and pour 1 tsp oil.
- Add asafoetida, chilli powder and coriander powder and the seeds and fry them well.
- Now add coconut and fry till the mixture is dark red in colour.
- Wash the vegetables and boil them with turmeric powder.
- When the vegetables are almost done add tamarind paste and allow it to boil for sometime (keep the stove in sim).
- Now grind the coconut mixture and add mashed dal to it.
- Add the mixture to the vegetables and let it boil for some time.
- Add desired salt.
- When the sambar is done, season oil with mustard and curry leaves, and add to it.
- Finally add finely chopped coriander leaves.
