Ingredients:

• For the pancakes:
• 1 cup – maida.
• 1/2 cup – Corn flour.
• 1 – egg.
• Salt to taste.
• Water.
• .
• For the filling:
• 1/2 cup – prawns.
• 4 – Onion (finely chopped).
• 1 tsp – Ginger paste.
• 1 tsp – Garlic paste.
• 3 or 4 – green chillies.
• 1/4 tsp – Turmeric powder.
• 1 small – Carrot (cut into bite-sized pieces).
• 1-2 – beans (cut into bite-sized piece).
• Capsicum, chopped.
• Coriander leaves.
• Salt.
• 1/2 pkt – noodles (boiled).
• 1 tsp – soya sauce.

Method:

  1. For the pancakes: Mix all the ingredients together using a whisk, so that no lumps are formed.
  2. The batter must be very thin.
  3. Heat a tawa and pour a spoonful of batter to make a dosa.
  4. Cook and keep aside.
  5. For the filling:
  6. Cook the prawns with some pepper powder, salt and turmeric powder and dice it.
  7. Heat some oil in a pan and saute onions, ginger, garlic, green chillies one after another.
  8. Add the chopped vegetables also.
  9. Once the vegetables are cooked, add the chopped prawns, salt and saute again for a few mins.
  10. Add the cooked noodles, cilantro and soya sauce.
  11. For the spring rolls:
  12. Take a pancake, put 2 tbsp of filling on one end, and roll to the other side folding all the sides so that no oil gets inside.
  13. Coat with beaten egg white, then bread crumbs and deep fry in oil till golden brown.
  14. Serve immediately with sauce.
