Ingredients:
• For the pancakes:
• 1 cup – maida.
• 1/2 cup – Corn flour.
• 1 – egg.
• Salt to taste.
• Water.
• .
• For the filling:
• 1/2 cup – prawns.
• 4 – Onion (finely chopped).
• 1 tsp – Ginger paste.
• 1 tsp – Garlic paste.
• 3 or 4 – green chillies.
• 1/4 tsp – Turmeric powder.
• 1 small – Carrot (cut into bite-sized pieces).
• 1-2 – beans (cut into bite-sized piece).
• Capsicum, chopped.
• Coriander leaves.
• Salt.
• 1/2 pkt – noodles (boiled).
• 1 tsp – soya sauce.
Method:
- For the pancakes: Mix all the ingredients together using a whisk, so that no lumps are formed.
- The batter must be very thin.
- Heat a tawa and pour a spoonful of batter to make a dosa.
- Cook and keep aside.
- For the filling:
- Cook the prawns with some pepper powder, salt and turmeric powder and dice it.
- Heat some oil in a pan and saute onions, ginger, garlic, green chillies one after another.
- Add the chopped vegetables also.
- Once the vegetables are cooked, add the chopped prawns, salt and saute again for a few mins.
- Add the cooked noodles, cilantro and soya sauce.
- For the spring rolls:
- Take a pancake, put 2 tbsp of filling on one end, and roll to the other side folding all the sides so that no oil gets inside.
- Coat with beaten egg white, then bread crumbs and deep fry in oil till golden brown.
- Serve immediately with sauce.
