Ingredients:

• 2 cups – all-purpose flour
• 3/4 cup – Sugar
• 1/2 cup – Canola Oil
• 1 cup – Pineapple juice
• 1 tbsp – Vinegar
• 1 tsp – baking soda
• 1 tsp – vanilla extract
• 1 cup – Pineapple piece
• 2 tbsp – powdered Sugar

Method:

  1. Whisk sugar, canola oil and pineapple juice until sugar dissolves
  2. Mix together all-purpose flour, baking soda and keep aside
  3. Now add the vinegar and vanilla extract to the whisked oil and sugar mixture, mix everything together.
  4. Gradually add the flour with baking soda and beat everything until it turns into a smooth batter.
  5. Add the pineapple pieces, mix again and keep aside
  6. Preheat the oven at 350 degree F
  7. Grease a cake mould, pour the cake batter and bake them in middle rack for 30 mins
  8. Let cool, before serving sprinkle powdered sugar on the cake
