Ingredients:
• 2 cups – all-purpose flour
• 3/4 cup – Sugar
• 1/2 cup – Canola Oil
• 1 cup – Pineapple juice
• 1 tbsp – Vinegar
• 1 tsp – baking soda
• 1 tsp – vanilla extract
• 1 cup – Pineapple piece
• 2 tbsp – powdered Sugar
Method:
- Whisk sugar, canola oil and pineapple juice until sugar dissolves
- Mix together all-purpose flour, baking soda and keep aside
- Now add the vinegar and vanilla extract to the whisked oil and sugar mixture, mix everything together.
- Gradually add the flour with baking soda and beat everything until it turns into a smooth batter.
- Add the pineapple pieces, mix again and keep aside
- Preheat the oven at 350 degree F
- Grease a cake mould, pour the cake batter and bake them in middle rack for 30 mins
- Let cool, before serving sprinkle powdered sugar on the cake
