Ingredients:

• 1 – large fresh Pineapple
• 250 g – Cottage cheese
• 1 tin – fruit cocktail
• juice of 1 Lime
• 200 g – seedless Raisins
• 1 – Capsicum (finely chopped)
• 2 stalks – Celery (finely chopped)
• 1 tbsp – Sugar
• 2 tbsp – mayonnaise
• 1 pkt – gelatin
• salt and pepper to taste

Method:

  1. Cut the pineapple in the shape of a basket.
  2. Scoop the pineapple from the shell and leave the shell in the refrigerator.
  3. Open the fruit cocktail tin and separate the fruit from the syrup.
  4. Reserve 6 tbsp of the syrup and in the remaining liquid add the fresh pineapple and stew for a few mins.
  5. Cool and then add the tinned fruit, grapes, capsicum, celery, lemon juice, salt and pepper.
  6. Mash the cottage cheese and add the mayonnaise and sugar.
  7. Melt the gelatine in the reserved fruit syrup.
  8. Now combine the fruit mixture with the cottage cheese mixture and lastly fold in the gelatine.
  9. Fill the above mixture in the pineapple basket, put in the refrigerator to set for 6 to 8 hours. Decorate and serve.
