
Ingredients:
• 1 – large fresh Pineapple
• 250 g – Cottage cheese
• 1 tin – fruit cocktail
• juice of 1 Lime
• 200 g – seedless Raisins
• 1 – Capsicum (finely chopped)
• 2 stalks – Celery (finely chopped)
• 1 tbsp – Sugar
• 2 tbsp – mayonnaise
• 1 pkt – gelatin
• salt and pepper to taste
Method:
- Cut the pineapple in the shape of a basket.
- Scoop the pineapple from the shell and leave the shell in the refrigerator.
- Open the fruit cocktail tin and separate the fruit from the syrup.
- Reserve 6 tbsp of the syrup and in the remaining liquid add the fresh pineapple and stew for a few mins.
- Cool and then add the tinned fruit, grapes, capsicum, celery, lemon juice, salt and pepper.
- Mash the cottage cheese and add the mayonnaise and sugar.
- Melt the gelatine in the reserved fruit syrup.
- Now combine the fruit mixture with the cottage cheese mixture and lastly fold in the gelatine.
- Fill the above mixture in the pineapple basket, put in the refrigerator to set for 6 to 8 hours. Decorate and serve.
