
Ingredients:
• Bitter gourd – 1/2 kg
• Oil
• Garlic – 8 flakes, sliced
• Onion – 1 cup, thinly sliced
• Coconut – 1/2 cup, grated
• Green chillies (sliced) – 2 to 3
• Peanuts – 2 tbsp
• Curry leaves – few
• Chilli powder – 1.5 tsp or to taste
• Coriander powder – 1 tsp
• Salt to taste
Method:
- Cut bitter gourd into thin round slices.
- Sprinkle some salt and keep aside for 15 mins.
- Drain the liquid and deep fry in hot oil till the slices are brown and crisp.
- Heat 3 tbsp of oil in a fry pan.
- Add garlic and fry till brown.
- Add onion, fry till brown.
- Add coconut, green chillies and peanuts.
- Fry till coconut and peanuts are golden.
- Add curry leaves, chilli and coriander powders.
- Fry for a few seconds.
- Add the bitter gourd slices, salt and mix well.
- Serve with rice.
