
Ingredients:
• 1 – Butternut squash
• 1 – Onion
• 2 – Carrots
• 2 cups – vegetable broth
• 1 can – Coconut Milk
• Salt to taste
• Pepper powder – 1/2 tsp
• 2 tbsp – Olive oil
Method:
- Heat olive oil in a pressure cooker
- Saute the onions until they turn translucent, add the chopped carrots, cubed butternut squash, cook for few minutes.
- Now add the vegetable broth, salt, cover the cooker with lid, put the weight and cook up to three whistles
- Once the steam subsides, add the coconut milk, pepper powder and blend the cooked vegetables with a hand blender to smooth paste
- Serve.
