
Ingredients:
• 3 – Potatoes
• 1 – Onion chopped
• 1 – Garlic clove, crushed
• 2 tbsp – oil
• 4 tsp – Curry leaves
• 2 tsp – Coconut powder mixed with 1 cup – hot water
• Spices:
• 1/4 tsp – Turmeric
• 1/2 – Green chilli
• 1 tsp – curry powder
• 2 tsp – Cinnamon
Method:
- Peel, slice the potatoes into thick chips and boil until just tender.
- Drain and set aside.
- Fry onion, garlic, all the spices and curry leaves until brown.
- Add the coconut milk and bring to the boil for 2 minutes.
- Add the potatoes and cook for 2 minutes and serve.
