Ingredients:

• 3 cups – All-purpose flour/Maida
• 1 tbsp – Oil
• Salt
• Oil for Deep Frying
• For stuffing:
• 1 cup – Whole black Urad Dal
• 1 – Onion (chopped)
• 2 – Green chillies (chopped)
• 1/4 cup – Coriander leaves (chopped)
• 1 tsp – Chaat masala
• 1/2 tsp – Ajwain seeds
• 1/2 tsp – Cumin seeds
• Salt
• Oil

Method:

  1. Soak the whole urad dals for at least 6 hours.
  2. Drain the water and grind as a coarse paste (Don’t add water).
  3. Heat oil, crackle the ajwain seeds and cumin seeds.
  4. Add the chopped onions, chopped green chillies and saute until the onions turns translucent.
  5. Now add the urad dal paste, chaat masala and salt and cook everything on simmer until the filling turns dry.
  6. Finally add the chopped coriander leaves and turn off the stove.
  7. Meanwhile knead a soft and stiff dough with maida, oil and water and keep aside for half an hour.
  8. Make medium sized rolls from the dough. Roll gently with the rolling pin.
  9. Place 2 tsps of the urad dal filling in the centre of the rolled dough.
  10. Cover the filling with the dough by slowly stretching it over the filling.
  11. Seal the ends and remove excess dough, roll gently again with a rolling pin.
  12. Meanwhile heat some oil for deep frying.
  13. Fry the kachoris in batches on a medium high flame.
  14. Cook for about 6 to 10 minutes till they turn golden brown.
