Ingredients:

• 4 to 5 – ripe Tomatoes
• 50 g – grated Carrot
• 50 g – grated Cabbage
• 50 g – grated Capsicum
• salt to taste
• 1/4 tsp – Turmeric powder
• 1 tsp – coriander powder
• 1 tsp – Red Chilli powder
• 1 tsp – kitchen king masala
• 1cup – Coriander leaves
• oil for cooking

Method:

  1. For the stuffing:
  2. Heat 1 tsp oil in the pan, add the grated vegetables, spices and salt. Mix well, cover and cook.
  3. Cut the top off the tomatoes, scoop out the seeds.
  4. Stuff the tomatoes with the cooked vegetables.
  5. Heat 2 tsp oil in a pan, place the stuffed tomatoes, cover and cook till the tomatoes are tender.
  6. Garnish with coriander leaves.
