Ingredients:

• 1/2 kg – Baby Potatoes
• 3 Onions (large and chopped)
• 4 – Garlic Cloves (crushed)
• a few Curry leaves
• 1 tsp – Cumin seeds
• 1/2 tsp – Turmeric powder
• Salt
• Oil
• Roast and grind:
• 4 – Dry Red Chillies
• 10 – Black peppers
• 1 tsp – Fennel seeds
• 2 tbsp – Coriander seeds
• 1/2 tsp – Flax seeds
• 2 tbsp – rolled oats
• 1inch Cinnamon stick

Method:

  1. Dry roast all the spices under the list ‘roast and grind’ and keep aside.
  2. Meanwhile, cook the baby potatoes in water with salt until they are well cooked, peel the skin and keep aside.
  3. Heat oil, fry the cumin seeds, crushed garlic cloves until they turn aromatic.
  4. Then add the chopped onions, curry leaves and saute until the onions turn translucent.
  5. Now add the cooked potatoes, turmeric powder and salt. Cook on medium flame for a few minutes.
  6. Finally add the ground spice powder as per requirement and cook on simmer till oil separates.
  7. Serve hot with rice and dal.
