Ingredients:

• 1 cup – Carrots
• 1 cup – Cabbage
• 1 cup – beans (all finely chopped)
• 1 cup – Corn and Peas
• 1/2 cup – moong dal
• 1 tsp – Urad Dal
• Mustard
• 3-4 – Green chillies
• 1/2 cup – grated Coconut
• 1-2 tbsp – oil
• A pinch of Turmeric powder
• Salt, to taste
• A sprig of Cilantro leaves

Method:

  1. Take oil in a thick bottomed pan and add mustard and urad dal.
  2. When the mustard splutters add the cut vegetables, moong dal, peas and corn. Add salt to taste.
  3. Add two cups of water – enough to cover the vegetables. Mix well and cover with plate.
  4. When the vegetables are well-cooked, set aside.
  5. Now blend cilantro leaves, green chillies and grated coconut and add to the vegetables.
  6. Mix well and serve.
