
Ingredients:
• 1 zucchini, cut into thin circles without peeling
• 1 medium head broccoli, cut into medium sized florets
• 200 gms – button mushrooms, leave whole
• 1 bell pepper, cut into slices or circles
• You could also use beans, Cauliflower or Carrots to add taste and colour to the dish
• 1 tsp – Oregano powder
• 1 tsp – dill powder
• 2 tsp – black pepper powder
• 2 tbsp. – chopped fresh Garlic
• 2 tbsp. – Butter
• salt to taste
Method:
- Prick the mushroom and keep aside. If you are using beans, carrots and cauliflower, cut them into medium pieces.
- Microwave all the vegetables for 1 minute. Alternatively, you could steam the vegetables for a few minutes till half tender.
- Heat butter and fry the vegetables over medium heat for 2-3 mins.
- Add the spices, salt and green fresh garlic, and stir-fry for 2 mins. more.
- Carry some dinner rolls to serve with this dish while travelling.
