Ingredients:

• 2 medium-sized – Potatoes
• 1 large – Aubergine
• 1 – Onion (red)
• 2 – Green chillies
• 2 tbsp – Butter
• Coriander leaves

Method:

  1. Cut the green chillies and onion into small pieces.
  2. Boil the potatoes and aubergine (baingan) with the skins on. Once boiled and cooled, remove the skins.
  3. Mash them together, adding the butter in.
  4. Add all the other ingredients. Mix well with the mash.
  5. Serve it as a side dish, or make it a sandwich filler.
