Ingredients:
• 250g – Potato
• 250g – Brinjal
• 250g – Onion
• 3 tbsp – oil
• 1 tsp – mustard
• 1 tsp – Cumin seeds
• 1 tsp – chilli powder
• 1/2 tsp – Turmeric powder
• 1 tsp – coriander powder
• 1/2 tsp – Garam Masala powder
• 1 tsp – dry Mango powder
• 1 tsp – Sugar
Method:
- Cut the potatoes and brinjal into thin slices
- Slice the onions thinly.
- Heat the oil in a kadai. Add mustard and cumin.
- When they splutter, add onion and fry till light brown.
- Mix all the powders with a little water to make a paste.
- Add them to the kadai and fry for one minute.
- Add brinjals and sprinkle salt and sugar lightly over them.
- Fry for a minute and then keep them covered on low heat till they are tender.
- Add potatoes and salt.
- Add mango powder and sugar.
- Mix well and leave it covered on low heat for 2-3 minutes.
- Serve hot with chapattis or steamed rice and dal.
