Ingredients:

• 100 g – plain biscuits such as Marie biscuits
• 50 g – Butter
• 500 g – cottage cheese/low-fat Cream cheese
• 1 cup – Milk
• 200 g – Sugar
• 3 eggs
• 1 tbsp – Lemon rind
• 2 tbsp – Lemon juice

Method:

  1. Melt the butter in a saucepan.
  2. Crush the biscuits with a rolling pin or in a blender till they are of the consistency of fine breadcrumbs. Then, mix them well with the melted butter.
  3. Now transfer this mixture to a non-stick cake tin with a removable base.
  4. Press down well to form the base.
  5. Blend the cottage cheese/cream cheese, milk and sugar together till smooth.
  6. Add the eggs, lemon rind and lemon juice and blend till smooth.
  7. Pour the mixture over the biscuit base.
  8. Bake in a preheated oven for 35 to 40 minutes till the top is firm to touch.
  9. Cool and then turn out on to plate.
