Ingredients:
• 2 – shallots, chopped
• 1 tbsp – Cream
• 1/4 pound – Butter
• 1 cup – white wine
• white pepper to taste
• cayenne pepper to taste
• salt to taste
Method:
- Sweat shallots in butter.
- Add white wine, a pinch each of salt, white pepper and cayenne pepper and reduce.
