Ingredients:

• 2.5 cups – basmati Rice
• 3 – large Onions
• 1 inch piece – Ginger
• 4-6 – green Cardamoms
• 10-15 – pepper Corns
• 2 – Bay Leaves
• 3 – Cloves
• 1 – Cinnamon
• 1 tsp – Jeera
• 2-3 tbsp – oil
• 2.5 cups – water

Method:

  1. Soak the rice for 3 hours.
  2. Heat 2-3 tbsp of oil and add all the spices.
  3. When the spices stop spluttering, add the onions and ginger.
  4. When the onions turn golden brown, add the rice and cook for 2 minutes.
  5. Add 2.5 cups of water and cook until done.
  6. Serve with sai bhaji and boondi raita.
