Ingredients:
• 2 cups – grated Carrot
• 1 cup – chopped Dates
• 1 cup – chopped cashew
• 2 cups – Sugar (powdered)
• 3 – eggs, separated
• 2 cups – Maida
• 1.5 cups – refined oil
• 1 tsp – baking powder
• 1 tsp – soda bi-carbonate
• 1 tsp – vanilla.
Method:
- Preheat oven to 190 C.
- Sieve flour together with baking powder and soda.
- Mix and beat well the powdered sugar and oil. Add egg yolks and beat well.
- Add chopped dates, cashews and grated carrot.
- Add maida and mix well. Add cardamom powder.
- Beat egg whites stiff and fold into carrot mixture.
- Place in a greased cake tin and bake until done.
