
Ingredients:
• eggs – 5
• Onion – 2, medium
• green chilly – 3, medium
• Yoghurt – 1/2 cup
• Garam Masala – 1/2 tsp (curry powder)
• Fennel seeds – 1/4 tsp
• Turmeric powder – 1/4 tsp
• Coriander leaves – 1 tsp, chopped
• oil for frying
• salt to taste
Method:
- Chop onions into medium sized pieces and cut green chillies vertically.
- Boil the eggs and remove the shells.
- Make small, shallow slits on the eggs.
- Heat oil, add green chillies and funnel seeds.
- Add onions and fry until it becomes golden brown. (Adding salt now will fry the onion quickly).
- Add chopped coriander leaves and fry for 2 minutes.
- To this, add turmeric, salt and yogurt.
- Mix well and add boiled eggs to this.
- Cook until it becomes a thick gravy. Add garam masala.
- Garnish with chopped coriander leaves.
- Serve with Chapatti.
