Ingredients:

• eggs – 5
• Onion – 2, medium
• green chilly – 3, medium
• Yoghurt – 1/2 cup
• Garam Masala – 1/2 tsp (curry powder)
• Fennel seeds – 1/4 tsp
• Turmeric powder – 1/4 tsp
• Coriander leaves – 1 tsp, chopped
• oil for frying
• salt to taste

Method:

  1. Chop onions into medium sized pieces and cut green chillies vertically.
  2. Boil the eggs and remove the shells.
  3. Make small, shallow slits on the eggs.
  4. Heat oil, add green chillies and funnel seeds.
  5. Add onions and fry until it becomes golden brown. (Adding salt now will fry the onion quickly).
  6. Add chopped coriander leaves and fry for 2 minutes.
  7. To this, add turmeric, salt and yogurt.
  8. Mix well and add boiled eggs to this.
  9. Cook until it becomes a thick gravy. Add garam masala.
  10. Garnish with chopped coriander leaves.
  11. Serve with Chapatti.
