Ingredients:

• 6 – boiled eggs
• 1 – large Onion
• 1 tsp – cumin
• 1.5 tsp – Ginger Garlic paste
• Dried desiccated Coconut powder
• Tamarind – 1 Lemon size
• 1/4 tsp – Garam Masala powder
• 1 tbsp – Red Chilli powder
• Salt to taste
• Curry leaves – a few sprigs
• Mustard Seeds – 1/4 tsp

Method:

  1. Make a paste of onion and cumin
  2. Heat oil in a pan, add mustard seeds
  3. When they splutter, add curry leaves
  4. Now add the onion cumin paste and fry well until onion mixture is reddish brown in colour
  5. Add ginger garlic paste, turmeric, red chilli powder, salt and fry for 3 mins
  6. Add desiccated coconut powder and fry for another 5 mins
  7. Add the tamarind pulp and eggs, bring to a boil
  8. Finally add coriander powder and garam masala powder
  9. Can be served hot with rice or roti
