
Ingredients:
• 1/2 cup – Instant coffee dissolved in water
• 8 oz – mascarpone Cream cheese
• 3/4 cup – sweetened heavy Cream
• 2 tbsp – vanilla extract/essence
• 20 -Italian ladyfinger cookies
• 1tbsp – unsweetened cocoa powder
Method:
- In a medium bowl, whip cream with vanilla until stiff peaks form.
- Fold mascarpone cheese into the whipped cream.
- Dip each lady finger cookie in the coffee and start lining the cookies at the bottom of a dish.
- Top with the whipped cream and cream cheese mixture.
- Repeat layers.
- Sprinkle with cocoa powder.
- Refrigerate 1-2 hours before serving.
- Decorate with fresh strawberries (optional).
