Ingredients:

• 1/2 cup – Instant coffee dissolved in water
• 8 oz – mascarpone Cream cheese
• 3/4 cup – sweetened heavy Cream
• 2 tbsp – vanilla extract/essence
• 20 -Italian ladyfinger cookies
• 1tbsp – unsweetened cocoa powder

Method:

  1. In a medium bowl, whip cream with vanilla until stiff peaks form.
  2. Fold mascarpone cheese into the whipped cream.
  3. Dip each lady finger cookie in the coffee and start lining the cookies at the bottom of a dish.
  4. Top with the whipped cream and cream cheese mixture.
  5. Repeat layers.
  6. Sprinkle with cocoa powder.
  7. Refrigerate 1-2 hours before serving.
  8. Decorate with fresh strawberries (optional).
