
Ingredients:
• 1 medium sized bunch – Palak
• A small piece – Ginger
• Green chillies
• 1 cup – Wheat Flour
• 1/2 cup – Rice Flour
• Salt to taste
• 1 – Onion, cut into small pieces
Method:
- Clean the palak and boil it with the ginger and green chillies for a few minutes.
- Drain the palak (reserve the water) and grind to a paste.
- In a bowl, take wheat flour, rice flour, salt, onion pieces. Add the palak paste. Add the cooled drained water to make a smooth dough loose enough to pour as dosa on a tawa.
- Add plain cold water if needed.
- Heat a non-stick tawa, apply a little oil on the tawa. When hot enough pour the dosa batter, around the edge of the tawa.
- Flick the tawa around to allow the batter to spread evenly throughout.
- Pour a tsp oil around the edges.
- Take care to lower the flame of the gas, to medium. It would burn fast on a high flame.
- Turn the dosa when done. It tastes great hot, with a blob of butter on it.
