Ingredients:

• 1 medium sized bunch – Palak
• A small piece – Ginger
• Green chillies
• 1 cup – Wheat Flour
• 1/2 cup – Rice Flour
• Salt to taste
• 1 – Onion, cut into small pieces

Method:

  1. Clean the palak and boil it with the ginger and green chillies for a few minutes.
  2. Drain the palak (reserve the water) and grind to a paste.
  3. In a bowl, take wheat flour, rice flour, salt, onion pieces. Add the palak paste. Add the cooled drained water to make a smooth dough loose enough to pour as dosa on a tawa.
  4. Add plain cold water if needed.
  5. Heat a non-stick tawa, apply a little oil on the tawa. When hot enough pour the dosa batter, around the edge of the tawa.
  6. Flick the tawa around to allow the batter to spread evenly throughout.
  7. Pour a tsp oil around the edges.
  8. Take care to lower the flame of the gas, to medium. It would burn fast on a high flame.
  9. Turn the dosa when done. It tastes great hot, with a blob of butter on it.
