Ingredients:

• 500g – mascarpone cheese
• 1.5 cups – espresso or strong coffee
• 6 tbsp – Sugar
• 2 packages – lady finger biscuits
• 1 oz – liqueur of your choice (Tia Maria, Kaluha, Baileys, etc)

Method:

  1. Separate egg yolks from egg whites.
  2. Beat egg yolks with sugar until creamy and smooth.
  3. Add the mascarpone cheese and liqueur.
  4. Beat egg whites until firm and fluffy. Add to the cheese mixture.
  5. Dip the lady finger biscuits into the coffee and layer the bottom of a pie dish.
  6. Cover it with the cheese mixture.
  7. Repeat for another layer.
