
Ingredients:
• 3 bunches Spinach (finely chopped and washed)
• 250 g – Paneer (cut into cubes)
• 1 big Onion (very finely chopped)
• 1.5 tsp – Ginger Garlic paste
• 2 Tomatoes (made into a puree)
• 3 Green chillies (finely chopped)
• 2 tsp – coriander powder
• 2 tbsp – oil
• salt to taste
Method:
- Put the spinach in a large microwave-safe bowl, cover and microwave on 100% power for 6 minutes.
- Stand 3 to 4 minutes, remove and blend to a smooth puree. Keep aside.
- Into the same dish, add oil. Microwave at 100% for 2 minutes.
- Add the chopped onions, ginger-garlic paste and green chillies and cook for 4 minutes. Add the tomato puree.
- Cook the tomato puree at the same level for 6 minutes or till the oil starts to separate.
- Add the coriander powder and salt. Cook for another 60 seconds. Stir in the pureed spinach.
- Add the paneer cubes and mix very gently and microwave at 60% power for 5 minutes.
- Serve with hot phulkas and onion slices.
