Ingredients:

• 1 cup – Orange juice
• 1/2 cup – Carrot juice
• 2 cups – vegetable stock or water
• 1/2.5 piece – ginger, finely chopped
• 1 tiny flake – garlic, finely chopped
• 1 small stalk – Lemon grass, finely chopped
• 1 tsp – Butter
• 10 to 12 – Basil leaves, tender
• pepper to taste
• salt to taste

Method:

  1. Heat butter and add ginger, garlic and lemon grass.
  2. Add vegetable stock, bring to a boil.
  3. Simmer for 5 minutes and add carrot juice and salt.
  4. Simmer for 5-7 minutes.
  5. Take off fire, stir in pepper and orange juice.
  6. Pour into serving bowls and garnish with a few basil leaves.
  7. Serve hot with slices of warmed garlic bread.
