Ingredients:

• 1 cup – spinach, blanched
• 2 cubes – Maggie vegetable stock
• 2 – medium sized Onions – sliced
• 2 Cloves – Garlic finely chopped (optional)
• 2.5 cups – rice, boiled and separated
• 2 tsp – oil for seasoning
• Salt as per taste
• chopped coriander for garnish

Method:

  1. In a wok put garlic in oil and saute until light brown.
  2. Add the sliced onions and saute until golden brown.
  3. Crush the Maggie cubes and add to the onions and let it mix thoroughly.
  4. Add the blanched spinach and add salt as per taste (Maggie cubes are quite salty). Stir for a while
