
Ingredients:
• Soya granules – 1 cup
• Palak (spinach) – 1 bunch
• Tomatoes – 2
• Ginger – 2tsp (minced)
• Madras curry powder (hot) – 1 tsp
• Fennel seeds – 1/2 tsp
• fresh Cream – 2 tbsp
• oil – 2 tbsp
• Garam Masala – 1/2 tsp
• Green chillies – 1 tsp (minced)
• Salt to taste
Method:
- Cook soya granules in hot water for 10 minutes. Cover.
- When cool, squeeze out water. Set aside.
- Chop palak (spinach) roughly after washing the leaves well.
- Heat oil in a pan. When hot, add the fennel seeds, minced green chillies and minced ginger. Saute.
- Add the Madras curry powder, 1 tbsp fresh cream. Continue stirring.
- Add chopped tomatoes. Sprinkle a little water and cook till tomatoes are soft.
- Add the soya granules. Stir.
- Add salt. Cover. After 5 minutes, add the chopped palak. Stir well.
- Sprinkle garam masala and add the balance cream. Stir well and serve hot with rotis or bread.
