Ingredients:

• 1 lb – skinned haddock, coley or cod
• 2 – potatoes, boiled and mashed
• 4 – scallions, finely chopped
• 4 or 2 inch – Ginger root, chopped
• 4 – green chillies, finely chopped
• 4 – fresh Cilantro and Mint leaves, chopped
• 2 – Egg
• 1 cup – bread crumbs
• 1 tbsp – vegetable oil
• salt
• black pepper.

Method:

  1. Put the fish in a lightly greased steamer and cook for 10 mins. Remove the steamer from the heat and leave the fish on the steaming tray to cool.
  2. Flake the fish with a fork and place in a large bowl.
  3. Add the potatoes, scallions, chillies, ginger, cilantro, mint seasoning and 1 egg.
  4. Beat the remaining egg in a bowl.
  5. Shape the mixture into patties.
  6. Dip the patties in egg, then coat in bread crumbs.
  7. Heat the oil and fry the patties, until brown.
  8. Serve hot with chilli sauce or chutney.
