Ingredients:
• 1 cup – small cubed Tofu
• 3 – eggs
• Salt as per taste
• 1/4 tsp – Garlic paste
• 1 tbsp – chopped Parsley
• 2 tbsp – oil
• For Peanut sauce:
• 1/2 cup – Peanut
• 2 tsp – soy sauce
• 2 tbsp -fish sauce
• 2 tsp – chilli sauce
• 1/3 cup – unsweetened Coconut Milk
• 1 tbsp – Vinegar
• Salt as per taste
• 1 tsp – Ginger paste
• 1 tsp – Garlic paste
• Peanut oil for deep frying
Method:
- For peanut sauce: Deep fry the peanuts in smoked peanut oil till golden brown (approx 3-4 minutes). Drain.
- Grind the peanuts with 1 tbsp peanut oil.
- Add all the ingredients and blend till smooth.
- Add more oil if sauce is thick.
- For omelette:
- Beat eggs with salt.
- Fold in tofu and other ingredients except oil.
- Heat 1 tbsp oil in a pan.
- Pour half of mixture.
- Spread over the pan.
- Cook it for 5 minutes.
- Slide it into plate.
- Repeat for remaining mixture.
- Spread peanut sauce over the omelettes.
- Serve hot.
