Ingredients:
• 4-5 – ripe tomatoes, chopped
• 2 – large onions, chopped
• 6 – flakes of garlic, chopped
• 1/2 inch piece of Ginger chopped
• 4 – green chillies, slit
• A small bunch of coriander leaves, chopped
• 1/2 tsp – chilli powder
• 1/4 tsp – Turmeric
• 4 – Cloves
• 1 – Cardamom
• 1/2 inch piece of Cinnamon
• 4 – boiled eggs (optional)
Method:
- Heat oil and add cloves, cardamom and cinnamon.
- Add onions, garlic and fry till golden brown.
- Add tomatoes, green chillies, ginger, chilli powder and turmeric.
- Simmer until the gravy thickens, becomes a deep red and the oil floats on top.
- Sprinkle with coriander. You can add boiled eggs to the gravy before removing from the fire, if you like.
- Serve with chapatti or rice.
