
Ingredients:
• 2 cups – all-purpose flour
• 1 cup – whole Wheat flour
• 1 cup – Avocado puree
• 1 cup – oil
• 1.5 cups – packed Brown sugar
• 1 tbsp – flaxseed powder
• 1 tsp – baking powder
• 1 tsp – baking soda + 1/2 tsp for cooking fruits
• 1/2 tsp – Cinnamon powder
• 1/4 tsp – Clove powder
• 1/4 tsp – Ginger powder
• 1/4 tsp – Nutmeg powder
• 3 tbsp – Honey
• 1 tsp – vanilla essence
• 1/2 cup – water
• 2 cups – dry fruits dates, black and golden raisins, apricots, pineapples, Prunes and tutti frutti), chopped finely
• 1/2 cup – nuts, chopped finely
• 2 tbsp – Orange zest
Method:
- Sieve the flours with baking powder and baking soda and keep aside.
- Mix the flaxseed powder in three tbsp of warm water to a paste and keep aside.
- In a pan, heat the dry fruits, sugar, honey, and water in low flame until the sugar dissolves, then put the flame in high and bring it to boil.
- Lower the flame and cook for half an hour, so that the dry fruits will get well cooked, turn off the stove and add 1/2 tsp of baking soda, mix and keep it aside.
- Preheat the oven to 300 degree F.
- In a bowl, take together the avocado puree, oil, flax seed mixture, vanilla essence and spice powders and mix, now add the cooked fruit mixture, orange zest and nuts, mix everything well.
- Add the flours to this mixture and mix gently with a spatula.
- Transfer this cake batter to the already prepared cake pan and bake cake for an hour or until a skewer inserted comes out clean.
- Let the cake cool completely .
- Dust with confectioner’s sugar .
