Ingredients:
• 1 cup – toor dal, cooked
• 2 cups – Watermelon white rinds, chopped finely
• 1/2 cup – sprouted Fenugreek seeds
• 1 – onion, chopped
• 1 – tomato, chopped
• 1 tbsp – rasam powder
• 1/4 tsp – Turmeric powder
• 1 tsp – pepper powder
• 1 tsp each – mustard seeds, Urad Dal and Cumin seeds
• 1/4 tsp – Asafoetida powder
• 3 -dry Red Chillies
• A few – Curry leaves
• 1 tsp – Lemon juice
• Salt to taste
• Oil to fry
Method:
- Heat oil in a pressure cooker and saute the chopped onions and tomato chunks until they turn mushy
- Add the watermelon rinds, sprouted fenugreek seeds, saute until the watermelon rinds turns soft
- Add the rasam powder, pepper powder, salt and cooked dal along with turmeric powder and enough water, boil
- Cook until the vegetables are done
- In a small pan, heat a tsp of oil and splutter mustard seeds, urad dal, cumin seeds, dry red chillies, asafoetida powder, curry leaves, add this tempered spices to the cooker
- Finally add the lemon juice and serve hot.
