Ingredients:

• 2 bunch – Methi leaves
• 2 – onion, small sizes
• 5 – 6 flakes – Garlic
• 2-4 – Green chillies
• 1 tsp – panch purhan
• 2 tbsp -mustard oil
• 50 g -brinjal
• salt

Method:

  1. Clean and wash methi leaves and cut into small pieces.
  2. Cut brinjal into small cubes. Wash and keep aside. Heat oil, add punch purhan and green chillies.
  3. When punch purhan pops, add chopped onion and fry it till it becomes tender.
  4. Now add brinjal and fry it for 5 mins.
  5. Add methi leaves and salt.
  6. Add crushed garlic over it and cover it for 5 mins.
  7. Remove the cover and cook it on high flame till water dries up.
  8. Remove from the stove and serve hot with plain rice.
