
Ingredients:
• 2 bunch – Methi leaves
• 2 – onion, small sizes
• 5 – 6 flakes – Garlic
• 2-4 – Green chillies
• 1 tsp – panch purhan
• 2 tbsp -mustard oil
• 50 g -brinjal
• salt
Method:
- Clean and wash methi leaves and cut into small pieces.
- Cut brinjal into small cubes. Wash and keep aside. Heat oil, add punch purhan and green chillies.
- When punch purhan pops, add chopped onion and fry it till it becomes tender.
- Now add brinjal and fry it for 5 mins.
- Add methi leaves and salt.
- Add crushed garlic over it and cover it for 5 mins.
- Remove the cover and cook it on high flame till water dries up.
- Remove from the stove and serve hot with plain rice.
