Ingredients:

• 2 cups – Barley flour
• 1 cup – Sugar
• 1/4 tsp – salt
• 1 tsp – baking soda
• 1/2 tsp – baking powder
• 1/4 cup – unsweetened cocoa powder
• 1 tbsp – vanilla extract
• 1/3 cup – Canola Oil
• 1 tbsp – Apple cider Vinegar
• 1cup – cold water

Method:

  1. Preheat the oven to 350 degree F for a few mins.
  2. Grease generously the bottom and sides of a round baking pan and line it with parchment paper.
  3. Sift together the barley flour, cocoa powder, baking soda, baking powder, sugar and salt, keep aside.
  4. Mix the vanilla extract, canola oil, vinegar, cold water in another bowl and gradually add it to the dry ingredients, don’t over mix the batter.
  5. Pour this batter into the prepared pan and bake for 25-30 mins or until a skewer inserted comes out clean.
  6. Cool it completely, remove the parchment paper and slice the cake.
