Ingredients:

• 250g – butter, softened
• 2.5 cups – pure icing Sugar
• 2 tsp – vanilla extract
• 1 – orange, rind finely grated
• 1 tbsp – oil +1 tbsp water+1 tsp – baking powder (replacer for 1 Egg )
• 2 .5 cups – plain flour
• 1 tsp – baking powder
• 1/2 cup – Almond meal (ground Almonds)

Method:

  1. Preheat oven to 160 degree C.
  2. Line 2 flat baking trays with a baking paper.
  3. Using an electric mixer, beat butter, 1 cup icing sugar, vanilla and orange rind until pale and creamy.
  4. Add egg replacer and beat until it is combines properly.
  5. Sift flour and baking powder over the mixture.
  6. Add almond meal.
  7. Stir until dough comes together.
  8. Using 1 tbsp dough per biscuit, roll out into 8cm-long sausage shapes.
  9. Bend to form crescent shapes.
  10. Place on baking trays, allowing room for the spreading.
  11. Bake for 20 minutes or until light golden.
  12. Stand for 5 minutes on trays until it becomes firm.
  13. Place remaining sugar in a bowl.
  14. Coat warm biscuits, 1 at a time, in sugar.
  15. Place it on a wire rack to cool.
  16. Sift any remaining icing sugar over biscuits when cool.
