Ingredients:
• 1 pint – Ice Cream
• 1 – beaten Egg
• 1/4 tsp – Vanilla
• 2.5 cups – Sweetened cornflakes
• 1/2 tsp – Ground Cinnamon
• Cooking oil for deep frying
Method:
- Place 4 scoops of ice cream in a pan. Allow it to freeze for two hours.
- In a small mixing bowl, mix egg and vanilla.
- In a pie plate, carefully stir cereal and cinnamon together.
- Dip each frozen ice-cream ball in the egg mixture and then roll them in the cereal mixture.
- Return coated ice cream balls to freezer and freeze for an hour.
- Reserve the remaining cereal mixture.
- In a small mixing bowl, stir the egg and vanilla again.
- Remove coated ice cream ball from the freezer.
- Dip the balls in the egg mixture and then roll them in the cereal mixture.
- Then freeze them again for 2 hours.
- In a deep pan, fry the coated ice cream balls for 15 seconds or till golden brown.
- Drain on paper towel. Return the fried ice cream balls to freezer while frying the remaining balls.
- Serve immediately.
