Ingredients:

• 200 g – mixed vegetables (carrots, cauliflower, beans, peas, corn)
• 6 to 7 tbsp – water
• 1.5 tbsp – Butter
• 1 tbsp – Ginger Garlic paste
• 1 medium onion, chopped
• 1 tsp – dried Thyme
• 2 tbsp – chopped Coriander leaves
• 1/2 tbsp – plain flour (maida)
• 3/4th cup – Cream
• 1/2 cup – Milk
• 1/2 tsp – Red Chilli powder
• 1 3/4 tbsp – Tomato ketchup
• salt to taste

Method:

  1. In a shallow microwave-safe dish, put the mixed vegetables and add water.
  2. Microwave on HIGH for 4-5 mins.
  3. Put the butter in a microwave-safe glass bowl.
  4. Microwave on HIGH for about 10-15 seconds.
  5. Add the ginger-garlic paste and onions and cook on HIGH for about 1 min 30 secs. or until light brown in colour.
  6. Combine the thyme, coriander, tomato ketchup, plain flour, cream, milk, red chilli powder, vegetables and salt.
  7. Add this mixture to the onions and cook on HIGH for 3 mins. Serve hot with parathas.
