Ingredients:

• 1 kg – Carrots
• 1.5 litre – Milk
• 500 g – Sugar
• A few – strands of Saffron
• 1 tsp – Cardamom powder
• 20 pieces – almonds, soaked in water for 5 hours
• 15 pieces – Pista
• 15 pieces – cashew nuts, soaked in water for 2 hours
• 4 tbsp – fresh Cream

Method:

  1. Peel and grate carrots.
  2. In a thick-bottomed pan, add milk and carrots and boil till thick, stirring occasionally.
  3. Once it starts thickening, stir continuously.
  4. Add sugar and cook further till it thickens more.
  5. Add fresh cream, saffron, cardamom powder and half of the almonds, pista, cashew nuts.
  6. Stir on low heat till the mixture forms a soft ball.
  7. Garnish with the remaining dry fruits and serve hot .
