Ingredients:

• 1 cup – basmati Rice
• 2 – Onions
• 1 – Carrot
• 12 – small flowerets Cauliflower
• 5 or 6 – Green chillies
• 4 Cloves – Garlic
• 1/2 piece – Ginger
• 1/2 tsp – coriander powder
• 1/2 tsp – cumin powder
• 1 tsp – Garam Masala powder
• A few sprigs – coriander
• 4 sprigs – Curry leaves
• 6 – Cashew nuts
• 2 tsp – Ghee
• Salt to taste

Method:

  1. Wash and soak rice for an hour
  2. Chop onions, carrot and cauliflower.
  3. Heat ghee in microwave for 1 min.
  4. Add cashew nuts, fry for a minute and keep aside.
  5. Add mustard, curry leaves and chillies for 30 secs.
  6. Now add onion, carrot, cauliflower, garlic, ginger, coriander, cumin, masala powders and salt, and cook for 3 minutes.
  7. Drain the rice and add to it. Add 2 cups of water and mix lightly.
  8. Microwave for 11 minutes, stirring once after 5 minutes.
  9. Sprinkle with finely chopped coriander leaves and cashew nuts.
