
Ingredients:
• 1 cup – basmati Rice
• 2 – Onions
• 1 – Carrot
• 12 – small flowerets Cauliflower
• 5 or 6 – Green chillies
• 4 Cloves – Garlic
• 1/2 piece – Ginger
• 1/2 tsp – coriander powder
• 1/2 tsp – cumin powder
• 1 tsp – Garam Masala powder
• A few sprigs – coriander
• 4 sprigs – Curry leaves
• 6 – Cashew nuts
• 2 tsp – Ghee
• Salt to taste
Method:
- Wash and soak rice for an hour
- Chop onions, carrot and cauliflower.
- Heat ghee in microwave for 1 min.
- Add cashew nuts, fry for a minute and keep aside.
- Add mustard, curry leaves and chillies for 30 secs.
- Now add onion, carrot, cauliflower, garlic, ginger, coriander, cumin, masala powders and salt, and cook for 3 minutes.
- Drain the rice and add to it. Add 2 cups of water and mix lightly.
- Microwave for 11 minutes, stirring once after 5 minutes.
- Sprinkle with finely chopped coriander leaves and cashew nuts.
