
Ingredients:
• 2 – medium to large ripe mangoes
• 1 packet – gelatine (3 tsp)
• 1/2 cup – hot water
• 1/3 cup – white Sugar
• 1 cup – good quality Coconut Milk
Method:
- Scoop out the mango pulp, including around the seed. Pour the fruit in a food processer or blender and blitz to create a smooth mango puree.
- Leave the puree in the processer/blender.
- Boil water in a saucepan and remove from the heat.
- Sprinkle gelatin, stirring the water briskly with a whisk or fork so that no lumps are formed.
- Add sugar to the mixture and stir to dissolve.
- Add the mixture to the mango in the food processer/blender.
- Add the coconut milk. Blitz briefly until the ingredients have combined.
- Pour into dessert bowls or cups and place in the refrigerator for at least 2 hours.
- Serve chilled with some fresh fruit.
