Ingredients:

• 2 – medium to large ripe mangoes
• 1 packet – gelatine (3 tsp)
• 1/2 cup – hot water
• 1/3 cup – white Sugar
• 1 cup – good quality Coconut Milk

Method:

  1. Scoop out the mango pulp, including around the seed. Pour the fruit in a food processer or blender and blitz to create a smooth mango puree.
  2. Leave the puree in the processer/blender.
  3. Boil water in a saucepan and remove from the heat.
  4. Sprinkle gelatin, stirring the water briskly with a whisk or fork so that no lumps are formed.
  5. Add sugar to the mixture and stir to dissolve.
  6. Add the mixture to the mango in the food processer/blender.
  7. Add the coconut milk. Blitz briefly until the ingredients have combined.
  8. Pour into dessert bowls or cups and place in the refrigerator for at least 2 hours.
  9. Serve chilled with some fresh fruit.
