Ingredients:
• Vegetables carrot, cabbage, beans – 1/2 kg
• Onion – 2 to 3
• Turmeric powder – 1 tsp
• Green chilli – 3 to 4
• Coconut – 1/2
• Mustard Seed
• Oil
Method:
- Chop the vegetables finely
- Take a fry pan and splutter mustard seeds in oil
- Add finely chopped onion
- When the onion has turned light brown in colour, add 1 tsp turmeric powder, medium chopped green chilly and salt to taste.
- Thoroughly mix all these in the fry pan.
- Add grated coconut and mix well.
- Add the chopped vegetable and stir
- Add a little water and cook the vegetable till done, stirring at intervals
- Serve with chappathi or rice
