Ingredients:

• 2 cups basmati Rice
• 1 cup Corn kernels
• 1 cup Green peas
• 10-12 cashews
• 2 tsp chilli powder
• 4 or 5 Bay Leaves
• 1/2 tsp ginger-garlic paste
• 1/2 tsp Garam Masala
• 1 small Onion
• 1/4 tsp Turmeric
• 4 tbsp oil or Ghee
• 1/2 tsp each cumin and Mustard Seeds
• Salt to taste

Method:

  1. First soak the basmati rice in 3.5 cups of water for 20 minutes. Pressure cook the rice and then allow it to cool.
  2. In a heavy saucepan, heat the oil. Add cumin and mustard seeds and let them splutter.
  3. Then, add onions, bay leaves and the ginger-garlic paste and fry them until they turn brown.
  4. To the same oil, add the corn, peas, turmeric, chilli, salt and masala powders. Cover and cook till they turn brown.
  5. Add the cooked rice and mix well and wait for 3-4 minutes.
  6. Garnish with cashews and coriander leaves.
  7. Serve hot with curd.
