
Ingredients:
• 2 cups basmati Rice
• 1 cup Corn kernels
• 1 cup Green peas
• 10-12 cashews
• 2 tsp chilli powder
• 4 or 5 Bay Leaves
• 1/2 tsp ginger-garlic paste
• 1/2 tsp Garam Masala
• 1 small Onion
• 1/4 tsp Turmeric
• 4 tbsp oil or Ghee
• 1/2 tsp each cumin and Mustard Seeds
• Salt to taste
Method:
- First soak the basmati rice in 3.5 cups of water for 20 minutes. Pressure cook the rice and then allow it to cool.
- In a heavy saucepan, heat the oil. Add cumin and mustard seeds and let them splutter.
- Then, add onions, bay leaves and the ginger-garlic paste and fry them until they turn brown.
- To the same oil, add the corn, peas, turmeric, chilli, salt and masala powders. Cover and cook till they turn brown.
- Add the cooked rice and mix well and wait for 3-4 minutes.
- Garnish with cashews and coriander leaves.
- Serve hot with curd.
