Ingredients:
• 2 cups – macaroni
• 1 – Onion (finely chopped)
• 1 – Tomato (finely chopped)
• 2 – Garlic (finely chopped)
• 3 tbsp – Olive oil
• 5-6 tbsp – Tomato sauce
• 1 cup – Milk
• 1/2 cup – white sauce
• 3-4 tbsp – Coriander leaves (finely chopped)
• 1 tbsp – Oregano
• 2 tbsp – black pepper
• 1 cup – grated mozzarella cheese
• salt to taste
Method:
- Cook the macaroni according to package directions.
- Drain the cooked macaroni and allow it to cool a little bit.
- In a medium-sized saucepan, heat olive oil over medium high flame.
- Add onion and garlic and saute gently for 2-3 mins.
- Add the chopped tomato and coriander leaves and saute for 5 mins on medium heat or until the tomatoes are done.
- Add tomato sauce and oregano and mix well.
- Add 1 cup of milk, 1 tbsp of black pepper and salt to taste and bring to boil.
- Lower the heat, cover and allow it to simmer for 15 mins. Your red sauce is ready.
- Grease a microwave-safe dish with 2 tbsp of olive oil and add one-quarter of the red sauce as a layer at the bottom.
- Spread one-third of the white sauce on top, carefully applying with a large spoon or spatula.
- Add the cooked macaroni over the white sauce.
- Press lightly with the spatula.
- Add 1 cup of grated cheese over the macaroni.
- Sprinkle black pepper on the top.
- Repeat the same process once more by applying red sauce over the cheese, then white sauce, macaroni and finally the remaining cheese.
- Microwave at 60 degrees for 5 mins and then grill for 2 mins.
- Pour in a plate, mix well and serve hot.
