
Ingredients:
• 4 to 5 – ripe Tomatoes
• 50 g – grated Carrot
• 50 g – grated Cabbage
• 50 g – grated Capsicum
• salt to taste
• 1/4 tsp – Turmeric powder
• 1 tsp – coriander powder
• 1 tsp – Red Chilli powder
• 1 tsp – kitchen king masala
• 1cup – Coriander leaves
• oil for cooking
Method:
- For the stuffing:
- Heat 1 tsp oil in the pan, add the grated vegetables, spices and salt. Mix well, cover and cook.
- Cut the top off the tomatoes, scoop out the seeds.
- Stuff the tomatoes with the cooked vegetables.
- Heat 2 tsp oil in a pan, place the stuffed tomatoes, cover and cook till the tomatoes are tender.
- Garnish with coriander leaves.
