
Ingredients:
• 1 cup – vegetables – (Yams, drumsticks, squash, yellow pumpkins, etc)
• Squash – 1 medium sized
• Turmeric – 1/2 tsp
• Pepper powder – 1 tsp
• Red Chilli Powder- 1 tsp
• Jaggery- 1/2 tsp
• Grated coconut- 4 tbsp (Keep separately)
• Grated coconut- 3/4 cup
• Salt to taste.
• Roast and grind:
• Grated Coconut – 3/4 cup
• Uncooked rice- 1 tsp
• Cumin seeds- 1 tsp
• Garnishing:
• Coconut oil – 4 tsp
• Curry leaves
• Mustard Seeds
• Red Chilli – 1 whole
• Grated Coconut – 4 tbsp
Method:
- Cut the vegetables of your choice into cubes.
- Add some water, turmeric, pepper powder, red chilli powder, jaggery and salt, and cook.
- Roast ingredients and grind them to a coarse consistency.
- When the vegetables are cooked, add the powdered ingredients. Allow to cook.
- Roast coconut which was kept separately until brown with oil.
- Mix and garnish with mustard, curry leaves and red chilli.
