Ingredients:
• 300 g – tender Gherkins
• 3 – green chillies, chopped
• 2 – onions, chopped
• 1 tbsp – chopped Garlic
• 1/4 tsp – Mustard Seeds
• 1/2 tsp – Turmeric powder
• 8 – Curry leaves
• 1/2 cup – grated Coconut (optional)
• 1 tbsp – oil
• Salt to taste
Method:
- Cut the gherkins into thin strips.
- Heat oil in a pan and add the mustard, garlic and curry leaves.
- When the mustard starts spluttering, add the chopped onion and green chillies and fry till the onions turn slightly brown.
- Add the gherkins, turmeric powder and salt and mix well.
- Mix in the grated coconut.
- Cover and cook for about 10 minutes till the gherkins are soft.
- Serve with rice and curry.
