Ingredients:

• 300 gm – ripe Pumpkin
• 10 slices – bread
• 1/2 cup – Milk
• 1/2 cup – Butter
• 1/2 cup – powdered Sugar
• 2 – eggs
• 5 tbsp – Orange marmalade, beaten till smooth
• 1/2 tsp – baking powder
• 1/2 tsp – dry Ginger powder.

Method:

  1. Peel the pumpkin and grate finely.
  2. Break the bread into tiny pieces.
  3. Beat butter and sugar together till light.
  4. Add the eggs one at a time, beating well after each addition.
  5. Add bread, pumpkin, milk, marmalade, baking powder and ginger powder.
  6. Pour in a pudding mould. (Leave enough space for pudding to rise.)
  7. Cover with two layers of aluminium foil and seal well.
  8. Place in a steamer and steam for one hour.
  9. Cool slightly and turn out on a serving plate.
  10. Serve warm with orange flavoured custard sauce.
