Ingredients:

• 1/2 kg – ivy gourd/kovakkai
• 1 – Onion
• 1 – Tomato
• 1 tbsp – Red Chilli powder
• 2 tbsp – coriander powder
• 1 tsp – Turmeric powder
• Asafetida, a pinch
• Salt to taste
• For tempering:
• Oil for frying
• 1 tsp – Mustard Seeds
• 1 tsp – Cumin seeds
• 1 tbsp – Black gram dal
• Curry leaves, a small quantity

Method:

  1. Wash and cut kovakkai lengthwise and slit into two pieces.
  2. Heat oil in a pan/kadai and splutter mustard seeds, black gram dal (split), curry leaves and hing.
  3. Then add onion and tomato and fry for some time.
  4. Add kovakkai, red chilli powder, coriander powder, turmeric powder and a little salt and fry for 10 minutes till the vegetable is cooked well.
  5. Serve hot.
